I attended GMIT and then DIT Dublin where I graduated with a culinary degree. I mainly worked in chain hotels, but I have also worked in some restaurants. I did two openings in my career the first with the Clarion hotel Liffeyvalley and then as Executive Chef with the Crowne Plaza Blancharstown. From there I then moved to the Osprey hotel in Naas as Executive Chef for over 5 years and helped in some of their other properties which are owed/ managed . From there I moved to the Knightsbrook hotel in Trim where I was over 2 kitchens I am now back with the Prem group as a Relationship manager. My main passions are quality, HACCP, food costing and kitchen management. I would also work closely with suppliers.
